With the temps already in the 90s (ugh!), it’s definitely sangria time! What I love about sangria is that the alcohol content can be diluted without overly impacting the flavor. So on those hot summer days, you won’t do yourself in with a glass or two of it! I also appreciate that sangria can (and should) be made ahead, so when your guests arrive (I’m assuming you’re sharing that pitcher with someone)… it’s a snap to serve and you aren’t running all over the place mixing up custom cocktails.
I tinkered quite a bit with this Pineapple Sangria. The first pass at it was not sweet enough, the second too sweet, but the third…just right! Here’s the recipe.
1 bottle of white wine (some people use Riesling but I used a Sauvignon Blanc and added sweetness with the juice / fruit)
3/4 cup of pineapple vodka (I used the Amsterdam brand)
1 cup of pineapple juice
1/2 cup of orange juice
1 cup of club soda
1 1/2 cups of pineapple and mango chunks
Lime slices from two limes
Mint for garnish
Place fruit in bottom of glass pitcher. Pour bottle of wine over top. Stir in vodka, pineapple juice, and orange juice. Just before serving, add club soda and ice. Fill serving glasses with plenty of ice before pouring! Cheers!!
