Blueberry Mojito

Cheers to the weekend! If you don’t grow mint in your garden, you really should. Yes, it can be invasive, but it’s a small price to pay for having such an important cocktail ingredient readily available. My mint has been taking off like crazy this year and so I knew it was time to harvest some of it to whip up some mojitos. Checking the fridge to see what other ingredients I had on hand, I was very pleasantly surprised to see that blueberries were still available. Usually my son devours them within minutes of me unpacking the groceries. It’s an expensive habit that he’s developed. Time for him to get a job. He’ll be three this year, after all.

Blueberry Mojito
serves 1 (you’ll probably make more)

Blueberry Mojito

1 handful of fresh blueberries
1 sprig of mint
1 oz. lime juice
2 1/2 tsp sugar
2 oz. white rum
2 oz. club soda

Muddle the blueberries with the mint, lime juice and sugar.

Add the rum and stir to combine. Pour over top of ice in cocktail glass. Top with club soda. Stir gently.
