Cheers to Friday!… After a long week (don’t they always seem long?!), two days of minimal plans and a cocktail (or two) is exactly what I need. There is never a dull moment in our household. With a sick baby and a near toe fatality for the four-year-old, we labored through a trying week. I tested this delicious creation Thursday night because I couldn’t wait for Friday. And now that it’s Friday, I will make another. This is officially my fave drink of the moment. Take a sip and it’s sweet, but the sip hides a little heat. Seriously, so good.

Jalapeño Mango Rum Cocktail

Makes one drink

5-7 mint leaves plus additional for garnish
4 slices jalapeño w/seeds, 1 reserved for garnish
1/2 lime, sliced (reserve one slice for garnish)
2 tablespoons simple syrup
2.5 ounces white rum
4 ounces mango puree

Muddle the mint, jalapeño, lime, and simple syrup in a cocktail shaker. Fill the cocktail shaker with ice. Add the rum and mango puree. Shake vigorously for approx. 10 seconds. Fill a glass with ice and strain the cocktail into the glass. Garnish with mint, a lime wedge and slice of jalapeño.

Drink. Repeat.
