For how much I love granola, I really don’t make it often enough. Fruit, yogurt and granola has been my go-to breakfast for the past decade. And when it’s made with a homemade granola? Well it’s easy to get out of bed for that!

The three dominant flavors in this granola are walnuts, almonds and coconut. Even though I love raisins and other dried fruit, I don’t use them in this particular recipe.

This time of year, I’m most likely to pair the granola with strawberries and peaches (a favorite combo of mine!), some plain greek yogurt and a drizzle of honey. The kids love it too, as a parfait or just plain as a snack.  Hope you enjoy it as much as we do!


My Favorite Granola

Ingredients

2 1/2 cups of oats
3/4 cup of chopped walnuts
3/4 cup of chopped almonds
1/2 cup unsweetened flaked coconut
1/3 cup brown sugar
1 tsp vanilla
pinch of salt
2 Tbsp salted butter, melted
2 Tbsp vegetable oil

Directions

Preheat oven to 250 degrees. Chop nuts to desired size (I do a pretty small chop). Toss oats, nuts, and coconut together in bowl.

In separate bowl, combine melted butter, oil, sugar vanilla and salt. Stir to combine. Pour over oat and nut mixture and stir well to distribute wet ingredients.

Spread granola out on baking pan (I used a round one because it was a baking marathon day and most of mine were being used or dirty).

Bake for roughly an hour, flipping granola periodically throughout cooking to ensure an evening browning. Remove and allow to cool for 15-20 minutes and then serve or store.
