I cannot believe that tomorrow is August 1st. Where has the summer gone? School starts in less than three weeks and that means summer is winding down (although the temperatures won’t for a while, unfortunately). That means that my days for enjoying coconut / pineapple / mango drinks are numbered. Yes, of course I could drink these sorts of beverages in the fall and winter. But it just wouldn’t feel right.

I don’t know if you’ve noticed, but La Croix has been busting out all sorts of new flavors lately. Apricot, Passion Fruit, and … Coconut. Coconut La Croix sounded so interesting that I just had to buy it. And I was pretty glad that I did. It’s a great mixer for light and refreshing cocktails.

Some people are surprised the first time they try La Croix. It’s not sweet AT ALL, but you expect it to be. Maybe because it’s in a soda can. So in coming up with this drink, I knew I wanted to add a touch of sweetness, but not too much as I wanted to keep it low cal. Whipped cream vodka, in my opinion, is too sweet for my palate when mixed with juices, but it balances the La Croix nicely in this recipe. And the mint adds great freshness.

Coconut Mint Sparkler


Ingredients


1/2 oz. Whipped Cream Vodka
1/2 oz. Vodka
4 oz. Coconut La Croix
1 1/2 tsp. Lime juice
Mint for garnish
Ice

Directions

Fill a low ball glass with ice. Pour in vodkas and lime juice, and top with La Croix. Stir gently. Garnish with mint. Cheers!!
