Happy National Tequila Day! … To whomever decided to make days in honor of donuts, chocolate, tequila, etc., thank you. Thank you for giving us a perfectly valid excuse to indulge in the things we hate to love. I mean you have to have a drink on national tequila day… and it’s on a Friday. Coincidence? I think not. Happy Friday Libation Day every Friday. 
This drink of course involves tequila and one of my favorite foods: cucumbers. This is the truth. One of my absolute favorite snacks that I’ve had for as long as I can remember is salted cucumber. I’m not sure if this is normal or how I came about salting my cucumbers, but I love it. If you’ve never tried it, please do.
My brother gave me some fresh cucumbers from his garden and considering I already love salt + cucs, incorporating a fresh cucumber into a classic margarita seemed like an obvious decision. The cucumber puts a light and refreshing twist on the marg. 
1 cucumber
1 lime, juiced
2.5 oz. tequila (I prefer Patron)
1 oz. triple sec
1 oz. simple syrup (adjust to taste)
Coarse salt, optional
Wet the rim of a glass with lime juice. Salt the rim of the glass. 
Peel cucumber. Reserve a couple slices for garnish (optional) and place balance in a blender. Purée until smooth. Strain the liquid into a cocktail shaker filled with ice. Add the lime juice, tequila, triple sec, and simple syrup. Shake vigorously for 30 seconds. 
Strain into glass prepared with salt run and filled with ice.
Drink. Repeat.
