One of my favorite summer drinks is a chilled glass of white sangria. Sangria is such an easy drink to multiply that I often make it when we have friends over. My favorite sangria to make is a White Peach Sangria. It’s so refreshing and delicious that it goes down like juice also making it a little dangerous. (Don’t worry, I’ll pass that recipe along at a later date.) I got inspired by all the beautiful Popsicles I’ve seen pop up on my Pinterest feed and thought my White Peach Sangria would be perfect as a Popsicle. Even better, I can stow them in the freezer and have one whenever I please without having to make an entire batch of sangria (though that’s not the worst thing in the world). As is the sangria, these are also perfect for a crowd… Though they’re so good, you may not want to share…
I made my White Peach Sangria Pops for my pop on Father’s Day yesterday (cheesy pun intended) and he loved them… so much so that he had three 😉 My kind of Pop.
White Peach Sangria Popsicles
1 cup dry white wine such as Savignon Blanc
3 tablespoons triple sec
2 tablespoons sugar
1 white peach, diced
12 grapes, quartered
1 cup lemonade
Combine wine, triple sec, sugar, & fruit into a measuring pitcher (or a medium sized bowl; the pitcher makes it easy to pour into the popsicle molds!). Stir and allow to sit for approximately 30 minutes to allow the sugar to dissolve and flavors combine. Stir in lemonade. Spoon & divide fruit pieces among six popsicle molds. Pour the wine mixture over the fruit, equally distributing across molds. Be sure to leave approximately 1/2″ remaining to the top of the molds. If using popsicle sticks, cover the molds with foil and insert sticks. Freeze for 4-6 hours.
