Strawberries & Cream Dream Cake

Two things are happening this week. One, my baby girl is turning five. Five. How did that happen? I know everyone says it, but it honestly feels like just yesterday that I brought her home. That little girl made me a mommy and has brought such joy to my life that I tear up just thinking about it. Love her to the moon and back.

Second, our town is hosting the annual South Carolina Strawberry Festival this weekend. Strawberries and peaches are pretty big in our neck of the woods, and this event is definitely the place to be. If you live in the Charlotte area and haven’t been before, you should check it out.

So what better way to celebrate the end of the toddler era and the kickoff of the strawberry season than with this Strawberries & Cream Dream Cake? It’s delicious. The cream is not too sweet, which really lets the strawberries shine. Plus it just looks so pretty. Enjoy!

Strawberries & Cream Dream Cake


3 cups cake flour
2  TSP baking powder
1/2 TSP salt
2/3 cup unsalted butter
1 1/2 cups granulated sugar
3 eggs2/3 cup sour cream
2/3 cup milk
1 1/2 TBSP vanilla

Cream / Frosting

1 cup sugar
1 8 oz package of cream cheese
2 TSP vanilla
3 cups whipping cream

For assembly:

2 cups of thinly sliced strawberries

Decorative Strawberries:
10-12 pretty, unblemished medium-sized strawberries
1 cup of candy melts / melting wafers


Preheat oven to 325 degrees. In stand mixer (or large bowl), cream together butter and sugar until smooth. Add eggs (one at a time), mixing to incorporate. Add sour cream and vanilla.

In a separate bowl, mix dry ingredients (flour, baking powder and salt). Add 1/2 of flour mixture, then add milk, then add the remainder of the flour mixture.

Pour into a 9 or 10″ round baking pan. (I’ll usually put it all into a single pan and then cut my layers, but you could also do two separate round baking pans to avoid having to cut the cake). If in a single pan, bake for 1 hour, or until toothpick comes out clean. If using two pans, cook for 35-40 minutes, or until toothpick comes out clean.

Cool cake and cut layers  (I cut mine into three using a long serrated knife).

Assemble your frosting. First, cream together cream cheese, vanilla and sugar. Set aside. Whip your heavy cream until stiff peaks form. Slowly fold whipped cream into cream cheese mixture, incorporating a little bit at a time.


Slice strawberries thinly.

Separate cake layers and prepare for assembly! Spread a thick layer of frosting over your first layer.

Follow up with 1 cup of the sliced strawberries.


Continue the same process with the next layer.


Melt chocolate, dip strawberries and let set on parchment paper. (I drizzled a contrasting color on top after they’d set … totally optional!)
